Here's a great recipe that a friend shared with me - I'm taking this one to share with my coworkers on Wednesday!

Crockpot Pumpkin Spice Latte
2c milk
2Tbsp canned pumpkin
2Tbsp white sugar
2Tbsp vanilla (not a typo, it asks for Tablespoons)
- OR 1/4 tsp cinnamon, 1/8 tsp cloves, 1/8 nutmeg, and a teeny tiny pinch of ground ginger
1/2c brewed espresso or 3/4 c strong brewed coffee
-garnish with whipped cream (optional)

Directions: This will make enough for 2 people to have a big mug with a bit leftover. Add the coffee/espresso and milk to the crockpot. Whisk in the pumpkin, spices, sugar and vanilla. Cover and cook on high for 2 hours if everything is cold. Whisk again. Ladle into mugs and garnish with whipped cream and additional cinnamon.

What a great family photo! Love it! Oh I cannot wait to try this recipe. I am usually not a fan of pumpkin but am beginning to like most pumpkin things that aren't pies....LOL.

Do you think there is a non-coffee version of this? What could be substituted?

I'm sure you could try just omitting the coffee from the recipe. It would make it warm flavored milk. Sounds soothing.
